The following pictures are of what's going on around here...BEAUTIFUL fall leaves on the mountains, and our obsession with canned applesauce. We spent TEN HOURS canning 2 bushels of apples on Saturday, and we ended up with 35 quarts. We had to make enough for ourselves, a few Christmas presents, and to give to Naomi, since she canned 10 jars of salsa for us. I particularly like the non-staged picture of Todd working. Notice the hot mitt in his back pocket. He was more into it than I was. :-) The blanket picture is to benefit my sisters. I wanted to show them what the blanket I just finished making looks like. P.S. Our apartment is usually spotless, so I put the picture of me sewing during our canning day in there to remind me what our apartment CAN look like if I'm not daily obsessed. This is not normal.

Greetings From Africa

Hello everyone. Just thought I'd post a quick little note from Brooke and me. Things are going well here in South Africa. We are working with an organization called Hands at Work (check out their web page www.handsatwork.org). They do work in 7 different countries and are also spread out throughout all of South Africa. They are a Faith Based Organization (FBO) and they are doing amazing work. Being here is definitely an answer to our prayers. Many of you know Brooke and I applied to the Peace Corps and waited for almost 2 years before we got our assignment. During our waiting time we had thought maybe God was calling us to do something else. We looked at several different missions trips, but none of them felt right. We wanted to live in a community and stay for an extended period of time without having to spend our own money to get there and live there. We wanted a two year experience like the Peace Corps, but wanted it to be like a mission trip. Well it just goes to show that God has his own timing. We could not have picked a better organization to be with had we picked it ourselves. Thank you Lord for answering our prayers. Please continue to pray for us as we are here. Sleep Camp
As many of you know, I have recently spent some time at a sleep clinic to help discover the reason behind my daytime sleepiness. Since it's summertime, we have decided to call it "sleep camp" (Jimmer will be attending "study camp" sometime this week where he will go to an undisclosed location away from his friends and stay until he takes his bar exam). I stayed 2 full nights and one day designated to taking naps. I am happy to report that I was the winner for the day-I was able to sleep on all 5 of my scheduled naps! I'm sure if they handed out trophies like other camps I would have received my fair share. Also noteworthy is that they discovered I have sleep apnea, which is a fancy way of saying I stop breathing a number of times a night. It sounds serious but apparently it's the popular thing to have these days. I now have a machine that I use at night, called a CPAP (Continuous Positive Air Pressure), that looks really funny. On the bright side, since I always wore ear plugs and a face mask to bed at night anyways, it's doesn't make me look much funnier that I already did! Since I have stated the machine I have noticed a huge difference. I used to have to go to my car during lunch everyday to take a nap and I haven't done that at all in the last week! This is very exciting for me and want to thank everyone for their prayers. Life is good. God is good!

Is this a record?
I don't mean to brag, but I am just wondering if a 5-1 success/failure rate is a record for Grandma's chocolate sheet cake with the hard chocolate frosting. So far I've only flopped it once and this week I made one that turned out exactly perfect. Do I win? ;-)
Also, I suggest a family poll on whether or not cracked glass jello salad is made with or without a graham cracker crust. Wouldn't that make it like a dessert?
